Shanshia Bi-Lo-Chung, king of green tea

Bi-Lo-Chung literally describes tealeaves in Chinese and means dark green (Bi) spiral shape (Lo) sprouts in the spring (Chung). Bi-Lo-Chung is a kind of non-fermented green tea. Only sprouts with two tiny new leaves mostly from Chin-Shin-Ganzai (cultivar) are plucked for further process. The fresh taste with a long sweet note is like refreshing breeze in the spring.

Bi-Lo-Chung is processed through a serious of steps, including fresh leaves, stirring, panning, first drying, mass breaking and drying. Two steps, withering and tossing, are skipped. Farmers usually keep fresh leaves setting for several hours to improve their flavor.
